Ingredients
Instructions
  1. Stir yeast into the warm water in a small bowl. Let stand for 5 minutes.
  2. Combine ingredients – sugar through boiling water – in a bowl of an electric mixer.
  3. Stir in yeast mixture.
  4. Mix with the dough hook of the electric mixer on medium speed until dough is smooth.
  5. Rest dough for 30 minutes.
  6. Roll to 1/4 inch thickness and cut beignets with a Mickey Mouse cookie cutter.
  7. Cover with a towel and let dough rise until doubled in size (about 1 1/2 hours).
  8. Heat 3 inches of vegetable oil to 350 degrees in a heavy pot over medium-high heat. Fry beignets until golden – about 2-3 minutes – and turn when they are brown on one side.
  9. Remove with tongs and place on paper towels to drain (they will be very hot!). While still warm, coat the beignets with powdered sugar and serve immediately.
